Towards a More Sustainable Restaurant Industry – Noot Nordik Kitchen 🍲 ♻️

At Noot Nordik Kitchen, Radisson Blu, sustainability has become a central part of the operation. With the help of a composting machine from Solserv, the restaurant has successfully reduced its food waste by almost 100%.

"The composting machine has become a key component of our sustainability strategy," says Daniel Rodriguez, Food & Beverage Manager. "We strive to work exclusively with local growers, and the circular system we've created not only returns nutrient-rich soil to the farmers but also helps reduce our carbon footprint."

Successful composting in Lerum 💯♻️

At Ica Kvantum in Lerum, a Solserv composting machine (GG100) is now in use to handle the store’s perishable waste. Store owner Owe Krook shares:
“We don’t like throwing food away, but it’s become increasingly difficult to get rid of produce that isn’t in perfect condition. Even at a heavy discount. At the same time, our waste solutions had become expensive and less practical. Then I heard about Solserv’s composting systems from another retailer and decided to give it a try.”

Owe and his team are thrilled with this solution to their food waste problem. “Not only have we significantly reduced our food waste, but we’re also getting a rich and powerful compost soil in return. It’s a truly meaningful and sustainable solution.”

Solserv collects the compost residue weekly and sells it on – and on Saturdays, Owe lets staff take some of the compost soil home to enrich their own garden beds. A fantastic win-win for everyone involved! 🌱

Since 2014, Fotografiska has been a pioneer in sustainability, and in 2019, the restaurant was awarded a Green Michelin Star. A key part of their success is the composting machine from Solserv, which helps them eliminate food waste and create nutrient-rich soil for their own crops.

"We strive for nothing to leave our kitchen," says Martin Wall, Executive Chef. "With the composting machine, we also enhance the flavors by growing our own vegetables like onions, carrots, and beets in our own compost soil. We make the most of every ingredient and create a sustainable cycle."

New addition to the team 💫

We are delighted to welcome Kristina Avery, who has joined Solserv as Sales and Finance Coordinator. Kristina will take on a variety of administrative tasks and support our sales department.

With roots in Germany, a Swedish-American husband, and many years of living in Sweden, Kristina moves easily between languages and cultures. She brings with her a professional background in finance and administration, with a focus on production industry. In Sweden she has worked as an economist for the Austrian construction giant Strabag, for Schmitz Cargobull, and as a Sales Coordinator at Hövding.
After a period of parental leave, Kristina is now ready to bring her structured, organized and solution-oriented approach to Solserv; acting as an important link in our daily operations.

We are very happy to have her on board and look forward to the positive impact she will bring to our team 💚

Tradition Meets Innovation – Sustainable Cycles at Hufvudsta Gård ♻️ 🍽️

Located just outside Stockholm, Hufvudsta Gård combines centuries of tradition with modern sustainability. The estate’s "Clean Eating by us" philosophy focuses on local, additive-free ingredients, with every effort made to minimize waste. Surplus kitchen materials and coffee grounds are composted using Solserv’s composting machine.

“The result is high-quality soil,” explains Jonas Parke, Site Manager. “We don’t just compost what’s left on the plate. The peels, the stems, the kitchen scraps; all of it is given a second life, turning into rich soil that nurtures our own crops and nearby urban gardens.”

By integrating sustainability and circular thinking, Hufvudsta Gård is proving how small changes can make a big impact, on both the environment and the local community. Their commitment sets a new standard for how modern businesses can blend tradition and innovation.

Living closer to nature and making it count 🌲 🧩

Anna Henning Moberg’s beautiful farm in Sörmland is a brilliant example of optimized use of a composting machine for private purposes.

Anna uses Solserv’s smallest composting machine at her farm – handling all household food waste. "We are a large family spanning three generations. We grow, fish, hunt and cook a lot of meals," she says. And where there is cooking, there is always food waste.

At Anna’s farm, all compostable waste now returns to the soil, closing the loop.
“It feels fantastic to have a circular system up and running, especially when you live as close to nature as we do here. And honestly – it’s easier and more convenient than you might think. Plus, it’s truly a win-win in every sense.” 🌱♻️

♻️ Closing the Loop: Radisson Blu Scandinavia Turns Kitchen Waste into New Fresh Products

At Radisson Blu Scandinavia Hotel Gothenburg, sustainability is woven into the daily routine. Their restaurant produces 70–100 kg of food waste every day, but none of it goes to landfill. With Oklin composters from Solserv, the team transforms all of that waste on site into nutrient‑rich compost. Local partners then use the compost to grow new crops; fresh ingredients that the hotel happily buys back for its menus.

By investing in this machine Radisson Blu Scandinavia has almost eliminated its food waste and dramatically reduced its environmental footprint. The attached video shows the hotel restaurant manager explaining how simple the system is to use and how proud the staff is to be part of a closed‑loop food system.

🌱 How do biochar and compost affect plant growth?

Solserv is proud to be part of Power Bio, a project co-funded by the European Union and running through 2026. More than 20 partners from Sweden and Denmark are working together to turn residual biomass into high-value products.

This summer, we’re testing how our compost mix interacts with biochar, and how this combination affects plant development. We’ve planted six different soil blends across 36 pots, growing both radishes and grass seeds:

• Soil + biochar
• Soil + compost
• Soil + biochar + compost
• Variations with different ratios of biochar and compost

The biochar is made from branches and twigs, which helps retain water and nutrients, releasing them as the plants need them. This promotes more even growth and reduces the need for watering and fertilizing.

The project team includes experts like Torleif Bramryd, Professor of Environmental Strategy at Lund University, and Heikki Sojakka, who brings over 30 years of experience in developing sustainable materials. We already know biochar and compost are a strong team – now we want to find out just how strong.
