“It’s so beautiful to watch the Norrmans, they work in such harmony. Anna and Lars started the boutique hotel to the old farmhouse in 2017 and this season F***y and Scott took over the hosting side enriching it with the sense of new gastronomic experiences. After dawn, we were happy to be part of the dinner together with Anna, Lars, F***y, Scott and Linda. Small plates of delicious homemade food with local ingredients; handpicked wild garlic, nearby farms potatoes, homemade cheese, locally made jams …The idea is to create social gatherings on their long table and share food with other guests and hosts, such an inviting way to get to know each other and exchange experiences and knowledge. What an attractive way, where we all meet and share through food, social dining anyone!?”⁠

During dinner, we talked about sustainability and a quote from Jonathon Day concludes it well: ⁠
“I think it is fair to say that sustainability is a journey – not a destination. It is a process, rather than an outcome. I expect that the best destinations would never feel that they have ticked off the box for sustainability and can now move on to the next thing. There are always ways to improve”⁠
