𝑁𝑢𝑒𝑎 𝑃𝑎𝑑 𝑋𝑂 was not the dish I expected to find at nahm. Which is precisely why I was drawn to it.
I heard the inspiration began with an XO sauce Chef Pim had created in the past. Together with Chef Peace, they gave it a new expression for nahm. Now I find myself wondering what a dish like this tastes like through the lens of nahm.
