แกงฮังเลถ้วยนี้ ผ่านมื้อสำคัญของคนแม่สอดมาแล้วนับไม่ถ้วน

บางรสชาติไม่ได้อยู่ยาวเพราะโชคดี แต่อยู่ยาวเพราะมีคนกลับมาหาซ้ำ ๆ
แกงฮังเลของเรา เริ่มจากหมูสามชั้นและหมูเนื้อแดงที่หมักกับเครื่องแกงล้านนาสด ขิง กระเทียม หอมแดง ข่า ตะไคร้ พริกแห้ง แล้วเคี่ยวช้า ๆ เป็นชั่วโมง จนเป็นหมูในน้ำแกงข้นขลุกขลิก สีน้ำตาลแดง มีน้ำมันเครื่องแกงลอยหน้าบาง ๆ รสเปรี้ยวจากมะขามเปียกตัดกับความหวานของน้ำตาลปี๊บได้พอดี แล้วปิดท้ายด้วยกลิ่นขิงซอยที่ลอยขึ้นมาตอนเปิดฝา

เมนูนี้เดินทางมาไกล ต้นทางคือครัวพม่าและชาวไทใหญ่ ก่อนจะกลายเมนูยอดนิยม แบบที่ใครก็ต้องสั่ง และแม่สอดเอง ก็คือจุดที่สองวัฒนธรรมนั้นมาเจอกันพอดี

ตักราดข้าวสวยร้อน ๆ แค่นั้นก็จบแล้ว
ข้าวสวยหุงใหม่ ๆ ตักฮังเลราด ไม่ต้องมีอะไรมากกว่านั้น แต่ถ้ามี ก็อร่อยขึ้นอีก เพราะยังมีอีกหลายเมนูในห้องอาหาร ที่แอดมินยังไม่ได้พูดถึง
เราเสิร์ฟถ้วยนี้บนโต๊ะงานแต่ง บนโต๊ะบุฟเฟต์ งานประชุม และบนโต๊ะมื้อกลางวันธรรมดาของแขกที่แวะมา รสชาติเดียวกันทั้งหมด เพราะเราไม่เคยคิดว่ามื้อไหนสำคัญน้อยกว่ามื้อไหน
