這香味著實令人難忘啊！

這鍋「閩菜狀元佛跳牆」，考驗的就是「等~」
鮑魚、海參、干貝、花膠，28種頂級山海珍味層層鋪進瓷甕
淋上琥珀色的火腿雞汁高湯，海參入口在舌尖彈牙，干貝鮮甜在嘴裡炸開，湯頭濃郁卻清澈見底！

為了燉這鍋湯，只有耐心等待才能換來的美味

鮑魚夠肥、干貝夠鮮、海參夠彈牙，但火侯不到位，都是白搭！
將頂級食材分層入甕，不能急
心急耐不住性子，這甕山海珍味只能整鍋重頭再來
等到最後一刻掀開荷葉——金黃色的湯汁在映入眼簾！
花膠的膠質完美融入高湯，每次入口都是鮮，食材層次分明絕不混濁，這琥珀色的高湯，匯聚了黃金雞汁的精華，把海參、鮑魚、干貝所有的鮮甜全逼了出來！

This aroma is simply unforgettable!
This pot of "Fujian Champion Buddha Jumps Over the Wall" is all about the wait.
Abalone, sea cucumber, dried scallops, fish maw — 28 kinds of premium mountain and sea delicacies, layered into a porcelain jar, then bathed in an amber ham-and-chicken broth. The sea cucumber has a springy bite, the dried scallops burst with sweetness on the tongue.
The broth is rich, yet crystal clear.
This soup can only be earned through patience. The abalone may be plump, the scallops fresh, the sea cucumber perfectly springy — but if the heat isn't exactly right, it's all for nothing.
Layering premium ingredients into the jar can't be rushed. Lose patience even for a moment, and the whole pot has to start over from scratch.
Then, at last, the lotus leaf is lifted — a golden broth reveals itself before your eyes. The fish maw's collagen melts seamlessly into the soup; every sip is pure umami, with distinct layers of flavor that never blur together.
This amber broth is the essence of golden chicken stock, drawing out every trace of sweetness from the sea cucumber, abalone, and scallops.
That first sip after the lid comes off — rich collagen wrapped in the fragrance of w**e, dried scallop sweetness and fish maw silkiness intertwining on the palate.

凌晨，主廚已從日月潭出發
車行蜿蜒山路，翻越層層山巒，只為尋一味
——雲林草嶺深處，藏著頭家嬤傳承數十年的古早滋味

這趟旅程的主角，是麻竹筍

頭家嬤已年過九旬，一身手藝卻絲毫未見鬆懈
她說：「一塊筍一定要搭配二至三顆黃豆粕，一層筍一層鹽，層層疊好才行」
連鹽的重量都不是憑感覺
——多少筍、配多少克鹽，是她堅持一生的黃金比例

醃筍干，要用傳統木炭慢火燉煮，絕不能圖快而用瓦斯
掀蓋那一刻，竹筍的甘甜隨蒸氣撲鼻而來
——那是唯有柴火才能逼出的溫潤香氣

刨絲、翻鹽、層層壓實，排除每一絲多餘空氣

Before dawn, while Sun Moon Lake still slept, the chef was already on the road.

The car wound through mountain after mountain, chasing a single flavor — hidden deep in Tsaoling, Yunlin, a taste passed down for decades by a woman known simply as Grandma Boss.

The star of this journey: makino bamboo shoots.

Past ninety years old, Grandma Boss hasn't lost an ounce of her craft. "Every layer of bamboo shoot needs two to three pieces of soybean cake," she says. "A layer of shoot, a layer of salt — stacked just so." Even the salt is never guessed at — how much shoot, how many grams of salt — a golden ratio she's held to her whole life.

To cure the bamboo shoots, she still uses traditional charcoal, slow and unhurried — never gas, never a shortcut. The moment the lid lifts, sweetness rises with the steam — a warmth only fire and time can coax out.

Shred, turn, press, layer — clearing away every last pocket of air, letting time slowly work its magic into something crisp and tangy. Behind this humble preserve lies craftsmanship built layer by layer over years, and an elder's quiet wisdom: let nothing go to waste.

What the chef brought home isn't just a handmade ingredient — it's a legacy, soon to arrive at the table.
