Looking for something to do on your snow/virtual days this week? Try this pistachio ice cream recipe!

Blend or crush 6oz pistachios

Melt 2T butter, crushed pistachios, 1/2c sugar and cook for a minute or so. Add 1/4c water and bring to a boil. Let it boil for 3 to 5 minutes. Add 2 c milk and let this sit in the fridge for 12 hours or so.

Strain out the pistachios. With the liquid - Add back in 1/4c of the strained pistachios, 3/4c sugar, 1t corn starch, 1/2c powdered milk, 1/4t citric acid, 1t vanilla - Blend together to make smooth.

Now add your mixture and 2c heavy cream to your ice cream maker and churn!

After you have turned in your ice cream has thickened, add in the remaining pistachios and some Heath bits.

Our ice cream turned out best after being in the freezer for 12 to 24 hours.
