TBT…well, not necessarily Thursday, but reminiscing about World of Coffee Expo.

There was one coffee that consistently stood out when we brewed it up and tasted with others and that’s our slow dry natural processed Pink Bourbon varietal from regenerative/organic farm El Triunfo and producer Camilo Enciso 🇨🇴

This coffee bring a lot to the table in terms of a fruit forward profile with high levels of sweetness and a touch of boozy/tangy characteristics that you find in an anaerobic natural coffee.

I highly recommend two things: brewing this in pour over or aeropress formats, AND letting this coffee rest for a few weeks off the roast date. It really sweetens up and gains clarity.

Heads up, we will be sampling this coffee at on the Arcata Plaza this Saturday (tomorrow 5/9)

Incoming….new decaf has landed and will be making its way through production here at the shop. Admittedly, carrying numerous decaf coffees doesn’t really work well for a small shop. But carrying something that is versatile and can carryover into every type of brewing format is something we like to hold.

So out of Peru, we have a Grade 1 organic and Swiss Water Process decaf roasted medium. Cup is sweet and creamy with notes of caramel sauce and milk chocolate. Coupled with mild citrus acidity this is a versatile coffee that brews great in all formats.

This one is sourced from smallholder producers of the Amazonas region in northern Peru. Farmers that contribute to this Swiss Water decaf lot are certified organic :)

Everybody’s got choices….so let me make it easier. That’s why we offer up the “roasters choice”. It takes the decision out of your hands and into ours.

A way to have fun with coffee. Try the favorites, the new stuff before it hits our site and try coffee when we’re just experimenting. But rest assured every time it’s gonna be a good one.

For those of you outside of our area all you gotta do is just push the button or anyone walking up to the shop here locally, just say “roll the dice”…. we got you covered.

OK, a little teaser here…but what if we opened on the weekends?

I’ll admit the pop-ups were special. Once a month from late spring to early fall YOU 🙏🏼 all made your way down to the industrial park to celebrate the shop once a month.

But now we think it’s time to open Saturdays and Sundays through summer/fall.

To our community at large, I’d like to hear your thoughts on bakery’s/bakers you’d like to see make drops for the shop. Comment or DM :)

Our new Menu (Mēnū) Kenya Peaberry. This coffee is from Menu Farmers Cooperative Society and processed at the Menu Factory in Bengoma County in Kenya.
It’s a washed process and we’re roasting it at a light medium. The is a very complex and juicy cup with notes of pineapple, mango, brown sugar, green tea, florals and citrus.

Still taking it all in…from our 280 ft.² little roast shack to the halls of the San Diego Convention Center. We couldn’t be more grateful for the opportunity to represent our little company AND especially grateful to the team Huge respect!!

The interactions and education gained is just giving us more momentum. Here’s a little snippet of our time on the floor as we prepared pour over samples of an amazing coffee from the Aponte Community 🇨🇴.

It has returned….we saw the arrival of our last bag we’ll get of Rosita’s Gesha. Sweet and Clean, that’s the overall theme of this lightly roasted, washed Gesha varietal. It’s been an absolute gem of a coffee.

Their farm, named after the matriarch of the family, Rosa Armani lies on 32 hectares of land dedicated to coffee production.

Lots consisting of Gesha, Java and CatuaĂ are grown here where they undergo a washed process. This particular microlot consists of Gesha, a specialty grade varietal known for its high cup quality with sweetness and florals typically the highlight. The special twist in this cup is a presence of candied ginger. Delicious.
