Dawn Ludwig has devoted her career to helping people discover the fun, beauty, and delicious taste of natural foods. Her experience training chefs and working with individuals, families, and health care practitioners has taught her what works, what doesn’t, and most importantly, how to make living and eating healthier a practical reality. Dawn’s latest project, with her husband Dr. David Ludwig, is the new book Always Hungry? Conquer Cravings, Retrain Your Fat Cells, and Lose Weight Permanently where she translates his science into comprehensive recipes, menu plans, and tips for applying the principles to everyday life.

Dawn Ludwig has devoted her career to helping people discover the fun, beauty, and delicious taste of natural foods. For 15 years, she owned and directed The Natural Epicurean Academy of Culinary Arts of Austin, Texas, recognized as a one of the top “Cutting Edge Cuisine” cooking schools in the U.S., according to Vegetarian Times (December 2000). In addition to training up-and-coming chefs, Dawn’s passion is guiding families to incorporate better foods into their everyday lives. With a 17-year old daughter and a 7-year old son, she has first-hand experience as a busy mother and business owner putting delicious and nutritious food on the dinner table. Her 20 years of experience working with culinary students, teachers, patients and health care practitioners has taught her what works, what doesn’t, and most importantly, how to work with families to make living healthier a practical reality. Dawn has now teamed up with her husband, Dr. David Ludwig on his new book Always Hungry? Conquer Cravings, Retrain Your Fat Cells, and Lose Weight Permanently. She helped translate his science and years of research into comprehensive recipes, menu plans, and tips for applying the principles to everyday life. Dawn has written on nutrition and health for a variety of publications including Whole Health Magazine, Natural Home, Austin Monthly, Austin Fit, and other health journals. Having experienced profound healing in her own life through the power of natural foods, Dawn has a deeply personal understanding of the maxim: “Let food be thy medicine, and let medicine be thy food.” With a gentle, yet powerful approach, she is able to touch and transform the lives of people of all ages, and in all states of health. Fresh Wellfleet Oysters, shucked by Benji. Love my little kitchen buddy! He’s not afraid to try something new, and he’s great in the kitchen. He LOVES raw oysters and was a whiz at shucking within the first minute. He even played them on ice with horseradish, lemons, and ketchup! My first Fathead Pizza. It was really delicious. I even made my own sausage spice mix and made Bison Sausage Patties to crumble as topping. Bison worked great as lower fat protein since the crust was super high fat. I’ll put together the sausage recipe and turn it into the next blog post on our website. Lentil Farro Salad for lunch. Combined leftover lentils and cooked farro with shaved fennel, chopped orange bell peppers, red onion, radishes, and celery then tossed with Mustard Vinaigrette Dressing (ALWAYS HUNGRY p. 264) served with a bit of protein on the side for a perfect Phase 2 Meal. AH Strawberry Shortcake! I had leftover Grain-Free Waffles (made as pancake variation - ALWAYS HUNGRY p. 223) that had dried out in the fridge for a few days. Rather than throw them away, I made some Strawberry Sauce (AH p223) and Fresh Whipped Cream (AH p. 223), then layered them in a dish and refrigerated to let the sauce soak into the pancakes. Beet Greens Sautéed with Garlic. This is my favorite way to eat greens. I often see people cut off the greens and throw them away 😱! However, even non-green-lovers like them done this way. Benji’s Roasted Brussels Sprouts. So simple and the ONLY way Benji (age 11) will eat them. Wash, trim bottom and cut in half. Toss with 2-3 Tbs evoo and 1/4 tsp salt. Lay flat in a single layer on a parchment-lined baking sheet. Bake at 425F for 15-20 minutes or until tender. Benji like to dip them in Lemon Aioli (ALWAYS DELICIOUS p.298) before eating. Comfort foods! Benji wanted Sweet Potato Latkes and Applesauce, so we got in the kitchen and made them. So simple and so satisfying. Fresh apples, chopped, cooked with a small amount of water, then puréed. And sweet potatoes grated, then mixed with bit of chickpea flour and egg, then pan-fried. Yum! Now I’ll have ginger even if the store doesn’t! #coronaprep Peel 6-inches of ginger with a spoon, cut into 1/4 inch slices, add with 1/3 cup water to a mason jar, then blend with an immersion blender. Freeze in ice cube trays then transfer to a freezer safe zip top bag. Green lipped mussels at Mills Bay Mussels Restaurant in New Zealand. Wow! So delicious. We had the taster platter to try them every way they could imagine preparing them. We decided that plain steamed with garlic and white wine was the best. That recipe is in Always Delicious using the mussels we get in Boston. Green lipped were something special though.
