We couldn’t have asked for a better concert season!

HUNTER’S CHICKEN. TWO WAYS.

Cluck’n Monday accidentally turned into dinner.

Hunter’s Chicken is British pub food. Chicken, bacon, barbecue sauce, melted cheddar.

Which sounds pretty familiar around here.

So we started with the sandwich.

Crispy chicken. Applewood bacon. Sharp cheddar. Beer-battered onion ring. Dill pickles. Toasted brioche. And a mustard BBQ we built from our house Memphis sweet.

That’s the Hunter’s Chicken Fried Sandwich.

Then we kept going.

We’re working on the fall menu right now, and this one made too much sense as a dinner plate.

Two chicken breasts off the flat top with applewood bacon, mushrooms, grilled red onion, sharp cheddar and the same Hunter’s mustard BBQ. Garlic red-skin mashed potatoes and sautéed vegetables alongside.

Tonight’s the night! Gates open at 6pm. 1000 Watt Prophets will start the night at 7pm with The Insiders: Tom Petty Tribute Band hitting the stage around 8:30. You won’t want to miss it!

Every Monday we ask the same question in the back of the house. What do we make that nobody in Cadillac made last week?

This week the answer came out of a conversation about kimchi.

We took a crispy chicken breast, lacquered it in a sweet gochujang glaze, and stacked it against chopped kimchi slaw and a garlic-sesame mayo we make in house. House quick pickles underneath. Toasted brioche on both sides. Scallion and sesame on top because it deserved it.

It eats sweet, then tangy, then savory, and it stays crunchy the whole way through. That contrast is the entire point of the sandwich.

Korean flavor, Northern Michigan Monday.

The Popper Burger.

Everybody up here has eaten a bacon wrapped jalapeño popper off a sheet pan. We put it on a burger.

Cream cheese warmed right on the patty. Applewood bacon. Pepper jack melted over the top. Charred jalapeño preserve, made here with blackened onion and maple. Pickled jalapeño. Buttered brioche.

You already know what it tastes like. Now it comes with a bun.
