We've been playing around with a new bowl in the Coyote kitchen.

Crispy pork belly bites, fried until golden and tossed in our house sweet chili soy glaze. Hot yaki soba noodles stir-fried with peppers, onions, shaved celery, carrots and red cabbage.

Quick-pickled cucumber and red onion, scallions, sesame, and a drizzle of our new maple sriracha sweet chili sauce.

Friday Fish Fry is getting a little Southern treatment tonight at Coyote Crossing.

Southern-Style Fish & Grits

We took our po***ck, soaked it in seasoned buttermilk, and gave it a crispy cornmeal crust. Four pieces served over creamy cheddar grits with a house-made Creole tomato gravy, fresh scallions, and three golden hush puppies.

A little different from our usual Friday fish fry, and a whole lot of good stuff in one bowl.

Wasabi Panko Salmon on feature today.

Salmon with a crisp wasabi herb panko crust, cilantro-lime sticky rice and fresh stir-fried vegetables with charred leek, broccoli, peppers and carrots in a ginger-lime hoisin glaze.

Finished with wasabi-cucumber aioli, scallions and toasted sesame.

A little different direction for this week's salmon feature. The wasabi has some bite, but doesn't take over the plate.
