Sunday afternoon very well spent in West Asheville at ! We did their seated experience "The Fundamentals of Pairing" which was a delightful and thoughtful 5 courses of food paired with delicious wines. The local chef took us on a journey of her ideas and favorite foods specially picked for this experience. I loved hearing about the Portland (Oregon) style clam chowder and oh man was it just as delicious to taste! In order of pairings. I think our favorite overall was the (pre) st. pattys style corned beef with slaw and honey mustard, but honestly it was all sooo good. Definitely check out the upcoming events when you're in town!
In order of courses:
1. Honey butter biscuit, creme fraise, chive & caviar paired with a French Cremant du Jura Brut, light and fruity and delicious bubble!
2. Clam chowder, sourdough cracker, butter topper, paired with an Italian Lumassina
3. Citrus carpaccio, pistachio, shallot, castelvetrano, greens & herbs, paired with a Hungarian Tokaji Furmint Sec, a bit dry and funky but very nice and not something we've had before
4. Crisped potato waffle, smoked corned beef, honey dijon, charred cabbage slaw, quail egg topper, with a Spanish As Xaras red that was light and had just a mild effervescence
5. Aged gouda creme tart with poached apple and apple caramel, paired with a Sauternes Creme de Tete from France, sweet but not as intense as a lot of desert wines we've encountered.
