Cowboy Meatloaf and Potato Casserole
Ingredients:
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup diced onion
1/4 cup diced bell pepper
1/4 cup diced mushrooms
1/4 cup diced tomatoes
1/4 cup barbecue sauce
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
2 cups mashed potatoes
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley
Directions:
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray.
In a mixing bowl, combine the ground beef, breadcrumbs, diced onion, diced bell pepper, diced mushrooms, diced tomatoes, barbecue sauce, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Press the meatloaf mixture evenly into the bottom of the prepared baking dish.
Spread the mashed potatoes over the meatloaf layer, smoothing it out with a spatula.
Sprinkle the shredded cheddar cheese over the mashed potatoes.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes before slicing.
Garnish with chopped fresh parsley before serving.
