A new collection of extraordinary Grand Crus offers another rare opportunity to experience the w**es that have shaped the Domaine’s legendary reputation in Burgundy.

The evening begins with a Ch*****ne welcome before a four-course tasting menu from Executive Chef Steven Devereaux Greene, thoughtfully paired with two-ounce pours of DRC’s coveted w**es. The final two courses will feature two vintages side by side, inviting guests to explore the nuances of each expression.

Hosted by Simon Kaufmann, The Umstead W**e Director and Advanced Sommelier, this intimate experience celebrates Côte d’Or at its most transcendent.

We’re delighted to introduce Iciar Martinez-Sagarra, Herons Evening Assistant Manager, whose appreciation for thoughtful hospitality and the people behind it brings a wonderful perspective to our dining room.

Joining The Umstead Hotel and Spa in May as Herons Morning Assistant Manager, Iciar transitioned into her evening role in July.

Having experienced both sides of the operation, she has developed a deep appreciation for the dedication and expertise of the team, particularly their ability to bring Chef Steven Devereaux Greene’s ever-evolving menus to life.

One of her favorite parts of
the evening is sharing Chef Greene’s culinary vision with guests tableside, connecting each dining experience to the seasonal ingredients harvested at One Oak Farm.

A bit more about Iciar

Role and tenure: Herons Evening Assistant Manager, with The Umstead since May.

Favorite part of her role: “What I enjoy most about my role is being surrounded by hospitality professionals who are deeply passionate about their craft.”

Outside of work: Iciar enjoys exploring local restaurants and discovering different approaches to hospitality. She’s also an avid music fan who loves traveling with her roommate to see their favorite bands perform live.

What makes Herons special: “I am always inspired by the talent and expertise of our team and by their ability to adapt to the ever-evolving menus that showcase the ingredients from One Oak Farm.”

Farm Friday | Fall’s Arrival

The autumn equinox marked the official shift in seasons earlier this week, and at The Umstead’s One Oak Farm, we look forward to the changes that the coming weeks will bring.

These scenes from last October offer a glimpse of what’s ahead, as the landscape gradually takes on warmer hues, the days grow shorter and the farm transitions from the abundance of summer into autumn.

With each new season comes a shift in what the land has to offer, inspiring the ingredients and flavors that find their way into the kitchens of The Umstead and Herons, as well as the seasonal cocktails served throughout the property.

A change of season is beginning to unfold at The Umstead. 🍂

Soon, the woodlands surrounding us will trade their summer greens for shades of amber, gold and crimson, reflecting across the lake and signaling the quiet arrival of fall.

We look forward to welcoming all that the season brings.

Last night, we welcomed artist Linda Ruth Dickinson to The Umstead Art Gallery for a reception celebrating Alignment, her latest collection of paintings exploring balance, movement, and perception through color and horizontal and vertical forms. Drawing on her bicultural heritage and personal experiences, the works invite viewers to find moments of stillness, reflection, and equilibrium.

Guests gathered alongside the artist to experience the collection while enjoying w**e and passed hors d’oeuvres, offering an opportunity to connect more deeply with the work and the ideas that inspired it.

Alignment remains on view in The Umstead Art Gallery through the end of the year, with paintings from the exhibition available for purchase through The Umstead Gift Shop.
