The people of St. Joseph, KS, were originally predominantly Roman Catholics of French American heritage, migrating from Kankakee, Illinois.

Settled in 1873, a post office opened on July 29, 1878, but would only last until 1901.

🎉 We Passed Inspection! 🎉

We’re so excited to officially share that our commercial kitchen has passed inspection! This has been a long time coming, and we couldn’t have done it without all of your support and encouragement. ❤️

Now comes the fun part… Ruby’s is coming soon!

Over the next couple of weeks, we’ll be restocking the farm stand and making appearances at the farmers market while we put the finishing touches on the storefront. Keep an eye on this page because we’ll be announcing Ruby’s official opening date very soon!

A little update on the name, too: Oat Hill isn’t going anywhere! Oat Hill will continue as the parent company behind everything we do, including our bakery and tallow products. Ruby’s is simply the name of our bakery storefront, where you’ll find all of our baked goods and other goodies.

Thank you all for supporting this dream from the very beginning. We can’t wait to open the doors and welcome you to Ruby’s! 🩷
