The baker in Naoussa worked with the door open so the whole street could watch, and he said the trick was not the oven or the flour but knowing the exact second to stop trusting the recipe and start trusting the smell. We are still learning the smell. The bread is patient with us.

She got up before the light did and took her drink out to the terrace. I stayed where I was. Somewhere over the bridge we had agreed that one of us would always be the one who got up early. It has never once been me. She knew that when she agreed to it.
