Somewhere between “we should really go out” and “let’s just stay here,” this happens…
Fresh summer food. Bare feet on the porch. The sound of the creek nearby. Kids running around while somebody claims they’re “just checking the grill” every 3 minutes.
That’s kind of the vibe at Foothills Farm in the summer.
☀️ Foothills Farm Summer Peach Caprese Pasta Salad
(Simple, fresh, and easy enough for vacation cooking.)
You’ll need:
• 1 box bowtie pasta
• 2 ripe peaches, sliced
• Cherry tomatoes
• Fresh mozzarella pearls
• Fresh basil
• Olive oil
• Balsamic glaze
• Salt + pepper
• Optional: grilled chicken
Cook pasta and let it cool. Toss everything together with olive oil, salt, and pepper. Drizzle balsamic glaze over the top right before serving.
Best enjoyed:
• after a creek day
• beside the outdoor fireplace
• with a cold drink in hand
• while somebody says, “we should do this more often.”
Some vacations are go-go-go.
