A seasonal favorite that's sure to please!
Brenda Gilliam's Pumpkin Spice Muffins
1 cup canned pumpkin
1 cup sugar
1 cup vegetable oil
½ cup buttermilk
2 eggs
1 2/3 cups flour
1 cup chopped walnuts (if desired)
1 cup golden raisons
1 tsp. cinnamon
½ tsp. cloves
¼ tsp. ginger
¼ tsp. allspice
1 tsp. baking soda
½ tsp. salt
Combine the pumpkin, sugar, oil, buttermilk, and eggs in a large mixing bowl. Beat together for 1 minute. Add flour, spices, soda, and salt. Stir into pumpkin mixture and mix thoroughly until mixture is moistened. Fold in nuts and golden raisins. Spray muffin cups with non-stick spray w/flour. Pour batter into muffin cups filling each 2/3 full. Bake in a 400 degree oven for 20-25 minutes. Remove from oven and cool.
Toppings, if desired
Beat 4 ounces of packaged cream cheese, ½ stick melted butter, 2 cups of powdered sugar, and 1 tsp. vanilla extract. When smooth and creamy with no lumps, take a knife and drizzle over the top of each muffin.
Alternatively, place 1 Tbsp. of powdered sugar in a small strainer and sift over each muffin before serving.
