Time of day. Angle of the sun. Shade or light. Warm fire or breeze. A gentle porch swing. Perhaps a dip in the tub. Or even back against an oak tree. Everyone’s idea of the perfect place to sit is totally their own. Called by a good book. The symphony of a grazing herd. Turtles sunning in the afternoon. Curled up in a chair, blanket-wrapped. Or maybe just a quiet moment with coffee in hand and not a care in the world. I guess that’s why we take sitting so seriously. Because there’s few small treasures quite like knowing you found the perfect spot.

Badger Flames erupting in color. Chioggias that ripple in stripes. Avalanches glistening white. When you spend an afternoon with Wes and Amelia in the garden, you learn quickly that there’s really no such thing as a “beet”.

The closer we look, the more we find a universe of diversity and flavor unfolding season by season. It’s part of a bigger conversation between what this corner of Georgia can yield and what Jake and the kitchen team need for their laboratory.

Smoking. Steaming. Fermenting. Distilling.

Ultimately we’re asking ourselves: How can we spark a delicious connection between our guests and the soil?

Because a beet is never just a beet.

The people who live here know Georgia is so much more than peaches. The blue ridge mountains to the north. The salt-marsh coastline and haunted moss-draped streets of Savannah. The creative heartbeat of Atlanta.

Every part of this amazing state and its people tells a different story. And then there’s ours, tucked in the quiet end of the Piedmont. Less famous but just as breathtaking where dense forest meets river shoals.

We’re proud to be part of one of the most naturally blessed states in the country and bring new attention to one of its hidden treasures.

The work of conserving and restoring the nearly four thousand acres entrusted to us at Quercus is fundamentally a relationship. A relationship between the garden, the soil, the animals, and our health.

We’re so inspired by the Relais & Chateaux association of properties to learn and deepen our understanding of these relationships. And how the interconnection between food, health, the environment, and hospitality coalesce into sublime experiences for our guests that at the same time further our commitment to land stewardship. Van Gogh looked at the stars and wondered, "Why, I ask myself, shouldn't the shining dots of the sky be as accessible as the black dots on the map of France?” We used to look up at night and see galaxies and stars unfold in ribbons and look for answers to our place beneath them.

Four out of five people in the world live under light polluted skies. On a clear night out on the pastures we’re grateful to still look up and see Vincent’s shining dots. We’re working to keep that true as long as possible so generations to come can sit beneath them.

There are probably simpler ways to prepare a sauna than to send a concierge out into the pre-dawn darkness to build a discreet and embering fire so that guests awake at sunrise to their private, pre-heated sauna … but none of them are quite this satisfying. When designing each cabin at Quercus, we wanted every structure to carry its own distinct relationship to the land. Ember was shaped by fire.

Its exterior was created using the traditional Japanese technique of Shou Sugi Ban, where wood is carefully charred to preserve and protect it over time. The process gives Ember its rich blackened texture and quiet depth. At sunrise, the charred surface begins to catch the light, glowing softly against the pasture as a new day unfolds across the land.
