What started as a small biodynamic garden in 2020 has grown into the heart of Quercus. Our co-founder, Angelos Pervanas, began with simple plantings and a curiosity for how a garden could exist in harmony with a working farm. Over time, he and our garden team shaped it into a system that moves in conversation with the soil, the animals, and the land.

Today, supported by the rhythms of the farm, the garden fuels our restaurant and has become a favorite place for guests to wander and taste. It’s where what we grow, forage, and dream up each week begins.
