“Good food with a WOW factor “is what our new chef Jimmy Carter likes to present. Jimmy comes to the Red Apple Inn highly recommended and has worked at several venues around Arkansas including Cajun’s Warf and Samantha’s in Little Rock plus country clubs in Hot Springs and Pine Bluff.
His culinary career started at Verizon Arena in concessions where he eventually made it in the kitchen and decided this was a career for him. Jimmy went to culinary school while raising his daughter and working full time. Jimmy was trained both at Pulaski Technical Culinary school under renowned Chef Jamie McAfee and with him at Pine Bluff Country Club. While in school, Jimmy competed in the Diamond Chef competition winning third overall as a student! Jimmy is a member of the American Culinary Federation-ACF certification demonstrates skill, knowledge and professionalism.
Smoking meat is one of his specialties and it took Jimmy two years to build his own custom smoker that he used recently here for an event. Jimmy says his cooking style is French and a little on the country side because he’s from Arkansas! He makes a GREAT Gumbo and I’ll bet we get that as a special come fall. Catering is his “jam” so he’s excited for wedding season and all of the special events we host here at the Red Apple Inn. Cooking is his hobby so when he’s not at work he spends time with his family, cooking and taking care of his “honey do” lists for his wife around the house. Welcome Chef Jimmy!
