The Historic Midland Hotel and Chop House will be CLOSED for the Christmas Holidays from Tuesday, December 21st, 2021 thru Sunday, December 26th, 2021 and will reopen with our normal Hours of Operation starting Monday, December 27th, 2021. Please give us a call and leave a message at (254)796-4426 for any upcoming reservations for the Chop House. We will return all phone messages by the end of the

Black Drum is what you missed last week. Sometimes I’m late to the party on photos🤣so this lovely photo is what you missed.

Now, I don’t want you to miss out this week. So, here it is………But this week, today on this fine Friday we are doing it one better and featuring Copper River Sockeye Salmon! Pan seared and finished with a red pepper veloute sauce & herb salad over green Chile white cheddar grits and grilled asparagus.

My photographer is my expo, my pantry guy and a server and will be on staff tonight. ❤️🤠Clayton is a Jack of all trades, one might say. Stay tuned for photos.

Lunch at the Chop House in historic Hico, Texas? Sounds good to me!

The Chop House is open for Lunch Service:
11 till 3 Thursday thru Sunday. And to make it more interesting, we had a few Brunchy Items to our menu on Sunday.

Just think, all this can be yours! From Sandwiches to Salads, hand cut Steaks to fresh Seafood. We have a little something for everyone.

Thoughts from an adult, just busy adulting:

Maybe I’ll do it different today and start with Dessert at The Midland Hotel and Chop House. I mean we are all adults here😂😂🤣🤣. The Chocolate Torte will never ruin your lunch.

I’m thinking after my dessert, I’m gonna want a Sunday Staple with the Red Chile Fried Chicken. Then I will make my date order the Black Drum Fish-n-Chips, just So I can create my own tasting menu.😀

Well, it is Lunch-Brunch Service and I’m parched. Maybe a glass of Champagne to help make me feel brunchy?

All items from all menus are available today.Don’t forget about our Herb Roasted Prime Rib that we feature every Sunday. Another one of those staples!

Cheers everybody! Be sure and Try our newest Summer Signature Drink at The Midland Hotel and Chop House !

I mean, who doesn’t love a Tiki Drink! This Pink Pineapple Pina Colada is what Summer Days and Nights are made of.

Pink pineapple infused Appleton Signature Rum is our libation of choice. Coco Real, sweetened coconut, pineapple juice, splash of OJ, Cran & Sprite. Heck, we have the whole kitchen fridge in on this one. And don’t forget the Paula’s Texas Orange.

If this one doesn’t get your taste buds, don’t worry…..we have plenty more to choose from. Strawberry Rhubarb Lemonade and The Lavender Lady are already Summer hits. El Jeffe and Peach Pie Sweet Tea are also back in action and available at The Chop House.

Aaaaaaaah……fresh Sable Fish! 3 days off the boat from Seafood Supply off the coast of Alaska. The meat on this fish is stark white from the cold water, slightly sweet, mild and flaky. Oh so delicious.

Tonight’s Sable feature is pan seared and finished with a Jumbo Lump Crab Beurre Blanc, Saffron Rice and grilled Broccolini. While quantities last!

Join us at The Chop House for lunch Service from 11 till 3 and Dinner Service from 5 till 9. And guess what? You can get dinner for lunch if you want!

Who’s looking for the perfect lunch? The Texas Reuben will do the trick at The Midland Hotel and Chop House in Historic Hico, Texas!

Brined, pickled and smoked in house, this Texas Brisket makes the best Corned Beef. Sliced thin & served on toasted Two Clay Bird’s Rye Bread with house made Russian Dressing & fermented Sour Kraut. this sammich will for sure catch your eye & taste buds. And don’t forget those hand cut fries.

I’m gonna be thirsty, so imma gonna try the El Jefe. Tamarind infused La Pulga Blanco with blood Orange. Think old Russian tea meets chipotle spicy Margarita. Oh so refreshing.

And then I’ll be sure and share a bite of the Banana Bread Fosters. Butter seared banana bread finished in a hot buttered rum sauce with Tilamook Ice Cream and bruleed bananas.

This gem sandwich is available for Lunch& Brunch service from 11 till 3 Thursday thru Sunday.

Some call it a ham sandwich……we make it fancy and call it a Croque Monsieur!

We start with our house cured Ham(brined, cured & smoked right here at The ChopHouse) and sandwich it between the best bread in the whole wide world, Sourdough from Two Clay Birds. Grilled to perfection until crusty, then melt fontina cheese. And don’t forget the Bechamel. But the secret to this sammich is the Poppy Seed Dijonaise. This is definitely a dipping sandwich folks. Then served with hand cut fries. Can’t forget those. They are the stuff dreams are made of.

Try our Croque Monsieur on your next visit to The Midland Hotel and Chop House. Available at Lunch and also Lunch-Brunch service on Sunday from 11 till 3. Add a local yard egg and make it a Croque Madame’. Sunny side is always on point!
