This evening at Flat Mountain Farm features a communal supper with Melbourne, Florida chef Toni Elkhouri, a chef whose work is shaped by the culinary traditions of Northern Lebanon, a lifelong commitment to sustainable kitchen practice, and decades spent building one of Florida’s most beloved family restaurants.
Toni’s culinary foundation is rooted in the flavors and techniques of her Lebanese heritage, carried forward through Cedars Café in Melbourne, a family restaurant established by her parents and now in its third decade of operation. A 2026 James Beard Award Semifinalist for Best Chef: South, Chef Toni made history as the first Lebanese chef to reach the restaurant and chef semifinalist stage in the Foundation’s history. Her approach is grounded in modern Northern Lebanese cuisine, brought to life through deep partnerships with local farmers, rigorous seasonal sourcing, and a root-to-stem philosophy that treats every byproduct as an ingredient.
For this dinner, Chef Toni will present a multi-course meal served family-style and designed for sharing. The menu will draw from the ingredients of Western North Carolina, interpreted through the lens of her Lebanese heritage. Expect bold, aromatic, and deeply personal food rooted in both place and memory.
