Gourmet dining in Spring Creek NC. Just returned from a wonderful 4 course meal prepared by Chef Mo at the Trust General Store. Local Shiitake soup, lobster roll wrapped in kale from Phillip's gardens, mixed greens salad with local domestic rabbit and petite carrots and rhubarb dressing from Phillip's gardens, blackened tuna and sweet potato cake over asparagus from Phillip's garden, creme brule with strawberries from Kana'Ti Lodge gardens. Now thats what I call "Home Cookin'! Thanks to Chef Mo and Brenda!

"Tub'n the Woods" is filling and heating! Jeannette will give it the inaugural dip tomorrow evening. Then comes the zen garden, wildflower path and maybe a tea house (someday)?

Three more inches of white fluffy stuff this morning. Thank you trees for storing up all that sunlight that is radiating from the fireplace. Hot oatmeal, spiced hot chocolate and cinnamon toast for breakfast, reminds me of summer camps from days long ago...

There's just something about fresh cut yellow jonquils and p***y willow in a vase-makes me thing about the Vernal Equinox! Today we have a new path to become a garden way to Jeannette's spa. Soon the new gameroom will be enclosed. Ducklings and chicks getting their adult feathers and moved to their "outisde house" (with heat lamp). Harvested some fresh Shiitake along with eggs from the hens.
We'll put a vase of jonquils and p***y willow in your room at Kana'Ti Lodge.
