Cornbread Casserole
Cornbread Casserole is designed to make enough of the classic side dish so everyone can have a slice! The fluffy, summery, and golden brown cornbread is filled with crispy bacon, spicy jalapeƱos, and sharp cheddar cheese for extra heartiness and deliciousness. Cornbread Casserole is easy to make and takes less than an hour to make, so you can always have it ready when youāre craving a rustic-style side!
Time: 55 minutes
Yield: 10 servings
Ingredients:
ā¢ 1 cup cornmeal
ā¢ 1 tablespoon baking powder
ā¢ 1 cup all-purpose flour
ā¢ 1 1/2 tablespoons sugar
ā¢ 3/4 teaspoon salt
ā¢ 1 (16 ounce) bag frozen corn, thawed and drained
ā¢ 1 cup milk
ā¢ 1 cup sour cream
ā¢ 6 tablespoons butter, melted
ā¢ ground black pepper, to taste
ā¢ 8 ounces bacon, crispy, diced, and divided
ā¢ 1-2 jalapeƱos, minced, to taste, and divided
ā¢ 1 1/2 cups cheddar cheese, grated and divided
Directions:
Step 1
Preheat the oven to 350 degrees F with the rack placed in the center position.
Step 2
Grease a 9x13-inch baking dish generously. Set aside.
Step 3
In a large bowl, whisk the cornmeal, baking powder, flour, sugar, and salt together.
Step 4
Add in the corn, milk, and sour cream. Stir to combine.
Step 5
Mix in the butter, black pepper, 7 ounces of the bacon, 3/4 of the jalapeƱos, and 1 cup of the cheese until just combined.
Step 6
Pour the mixture into the prepared baking dish.
Step 7
Smooth the top.
Step 8
Sprinkle the top with the remaining jalapeƱos, bacon, and cheese.
Step 9
Bake until golden brown, about 40-45 minutes.
Step 10
Serve.
