Something delicious is on the horizon at Tommy Bahama Miramonte Resort & Spa.

We're excited to welcome Chef Jose Valdez as the new Chef de Cuisine at Grapefruit Basil.

Born and raised in Southern California, Chef Jose brings nearly a decade of experience from acclaimed resorts and private clubs across the country. His style blends classical French technique with the fresh, seasonal flavors of California, creating dishes that are vibrant, approachable, and meant to be shared.

And this is just the beginning.

In the months ahead, guests can look forward to new seasonal menus inspired by the flavors of the Coachella Valley. This October, Chef Jose will debut our inaugural Winemaker Dinner Series with Grgich Hills Winery, bringing together exceptional wines and thoughtfully paired cuisine. He'll also introduce hands-on Charcuterie & Board Building classes, sharing tips and techniques for creating beautiful boards that are perfect for entertaining.

Whether you're joining us for brunch on the patio, a special evening of wine and dining, or one of our new culinary experiences, we look forward to welcoming you to the table.
