A love of seafood. A longtime dream of island living. Meet Chef Bill Zimmer, joining us end of October. 🦩

Our incoming Executive Chef began his culinary career as a dishwasher, using every opportunity to learn food preparation, pizza making, and the workings of a kitchen. That curiosity took him from fine dining restaurants to brewery kitchens and hotel hospitality, building more than 20 years of culinary leadership experience along the way.

Most recently, Chef Bill served as Executive Sous Chef at Hyatt Regency Coconut Point, leading culinary operations across seven outlets. His favorite thing to cook? Anything from the sea, a passion we’re looking forward to welcoming to our kitchen here in Key West.

For Bill, this move also fulfills a longtime wish to live and work on an island. He and his wife, Jenna, are making Key West home, and when he’s outside the kitchen, you may find him on the water working on his scuba diving skills.

Please join us in welcoming Chef Bill to Four Flamingos. Meet him at our Passing the Flame dinner on October 28, when he joins Chef Leo for a special evening celebrating the people, places, and local waters that inspire us.
