When we operated our B&B we rarely served pancakes, I thought they were a little to ordinary, but now we love to try all different kinds, and there is nothing ordinary about them! Pumpkin Pie Pancakes
1/2 C unsweetend almond milk
1/2 C unsweetend pumpin puree
1 C gluten free flour or all purpose flour
1/2 C mini chocolate chips
3 TBS coconut sugar
1/2 tsp ground cinnamon
1/8 tsp baking power
1/4 C pecans for topping and maple syrup
Mix all ingredients and cook on a hot griddle! Yum

We love all mushrooms, but this past year we have been on a shiitake bacon kick - it is simple and delicious for vegans and non-vegans alike. Here is the recipe: Remove stems from mushrooms, slice 1/4 inch. Drizzle with olive oil, salt and cover with smoked paprika. Bake at 400 - flipping every 15 minutes until crispy and somewhat dried. About 25 to 30 minutes. I have substituted all types of mushrooms, even portobello's, and they are all delicious! I have tried numerous recipes, but this is the best and most simple. Now, I always am sure to have smoked paprika handy and ready to whip up a batch! Make a big batch - they go quickly 😍

Corn Chowder: Olive oil to coat pan, about 2 TBS. Saute 2 C chopped onions for 10 minutes. Add 2 TBS. flour. Stir another 5 minutes. Add 4 C vegetable stock and 2 Lg chopped potatoes cooking over medium heat for about 12-15 minutes. Add 1 Cup Coconut milk, add 4 cups corn, 3/4 t. pepper and salt to taste. Cook about 7 minutes, stirring occasionally. Add bell pepper and scallions or chives. Adjust seasoning ( I added a dash of chili pepper ) - serve immediately. 6 portions (The New Basics Cookbook)
Sweet Potatoes: Bake sweet potatoes at 350 for about 50 minutes until tender. Slice in 1/2 lengthwise, and cut a slit in each half. sprinkle with cinnamon, and top with banana slices, almonds, maple syrup, salt and lime juice. Place back in oven for 5 minutes. (The Berkshire Eagle - D"Arabian

We have a new blog up about summer living at Crabtree Cottage! http://crabtreecottage.com/summertime-and-the-livin-is-easy/ On the blog there is a recipe for Chow Chow, and here is a recipe for soba noodle salad:
Ingredients
Salt.
8 ounces soba noodles or whole wheat linguine or spaghetti.
1/2 cabbage finely chopped
1/2 package frozen peas or edame
1/4 cup honey, maple syrup or agave
1/4 cup soy sauce.
2 tablespoons rice vinegar or sherry vinegar.
6 large cloves garlic, finely grated or minced.(we love garlic)
1 2-inch piece of fresh ginger, peeled and finely grated.
1 Fresno chili pepper or red finger chili pepper, finely chopped.
Bring a large pot of salted water to a boil. Add the noodles and cook to al dente, then drain.

Meanwhile, combine the honey, soy sauce, vinegar, garlic, ginger and chili pepper in a large bowl; whisk in the oil. Add the cabbage, edamame, scallions and noodles and toss to combine. Sprinkle with the sesame or h**p seeds.

Our version of Summer Living is to incorporate Hygge in the garden ~ twinkle lights, candles, scents of amazing flowers, a fire in the chiminea, and amazing atmosphere!

I have a new blog about Spring Hygge, http://crabtreecottage.com/spring-hygee/ - and here is my recipe for Artichoke Lemon Soup:
2 tablespoons olive oil
2 celery stalks, chopped
1 medium onion, chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cups vegetable broth, plus extra, as needed
One 12-ounce package frozen artichoke hearts, thawed
1 packed cup fresh spinach
1 lemon juiced and grate the rind too

Heat the olive oil in a large saucepan over medium heat. Add the celery, onion, 1/4 teaspoon of the salt and the pepper. Cook the vegetables until just tender, about 4 minutes. Add 2 cups broth and the artichoke hearts and bring to a boil. Cover, reduce the heat to medium-low and simmer until the artichoke hearts are tender, about 12 minutes.

Puree the soup, until very smooth, adding the spinach and lemon with the last cup. Return the puree to the same saucepan. Mix in the remaining 1/4 teaspoon salt. Warm over low heat, thinning with the additional broth by 1/4 cupfuls if the soup is too thick. Ladle the soup into bowls. Squeeze a lemon wedge over each bowl of soup before serving. Garnish with mint or scallion.

Of course food is part of being cozy in your own home, and the art of Hygge is noticing that the ordinary
really is quite extraordinary. I made this simple pasta and added garlic, capers and zoodles to the rice pasta. It
was healthy & delicious ~ a new favorite for the new year!

You probably already have a favorite pantry pasta dish that you habitually whip up when there’s nothing in the house for dinner Next time, try this one instead It has all the usual players – olive oil, Parmesan, flaky sea salt — along with fried lemons for brightness and chile flakes for heat

POP over to my blog for some summer reflections here at Crabtree Cottage http://crabtreecottage.com/blog/ and here is a recipe for our favorite popcorn! Sometimes we serve it at our parties, for a snack, or if we are to lazy to cook or go out, we serve it for dinner!

Crabtree Cottage Popcorn:
1 Big bowl of popcorn ( we cook ours in a 9" cast iron skillet with about 3 TBS of olive oil and coat the pan with the a single layer of popcorn. This fills one very big bowl! If you like you can drizzle some extra olive oil on the popcorn when it is cooked too.
~ now the fun part. Sprinkle on Himalayan Sea Salt, cayenne peppers, garlic powder, ground cumin, curry powder and turmeric powder - all to your taste! As our Julia says, "Biddies be poppin' .
