The Hungry Hussey is pairing juicy pork chops with a sweet, tangy peach chutney for a combination that was made for the Blackstone. With fresh peaches, brown sugar, a little heat, and a touch of cinnamon, this is one summer meal you’ll want to try.

Watch the full video on our YouTube channel.

Ingredients
Pork Chops
4 ribeye-cut or bone-in pork chops, about 1 inch thick
1 tbsp Blackstone Essential Blend Seasoning
1 tbsp Blackstone Outlaw BBQ Seasoning
1 tsp avocado oil or other high-heat cooking oil
1 tbsp unsalted butter, for basting
Blackstone Post Dust Finishing Seasoning, optional

Peach Chutney
3–4 ripe peaches, peeled, pitted, and cut into chunks
1 tbsp unsalted butter
2 tbsp packed brown sugar
1 tbsp rice wine vinegar
¼ tsp crushed red pepper flakes, or to taste
¼ tsp ground cinnamon
1 tsp minced garlic

Directions
1. Peel and pit the peaches, then cut them into a mix of small and large chunks. This allows some of the peaches to soften into the chutney while the larger pieces hold their shape.
2. Pat the pork chops dry and season both sides with Blackstone Essential Blend and Outlaw BBQ Seasoning.
3. Preheat your Blackstone griddle to medium to medium-low heat, creating a hotter zone for the pork chops and a slightly cooler zone for the chutney.
4. Melt 1 tablespoon of butter on the cooler side of the griddle. Add the peaches, brown sugar, rice wine vinegar, red pepper flakes, and cinnamon. Cook for 6–10 minutes, stirring occasionally, until the peaches soften and the mixture becomes thick and glossy.
5. Lightly oil the hotter side of the griddle and add the pork chops. Cook for about 3 minutes on the first side, or until well browned.
6. Flip the pork chops and continue cooking, turning occasionally to develop an even crust without burning the seasoning.
7. During the last minute of cooking the chutney, stir in the minced garlic. Cook just until fragrant, then transfer the chutney to a bowl.
8. When the pork chops are nearly finished, add 1 tablespoon of butter to the griddle. Turn the chops through the melted butter to baste them and develop a richer crust.
9. Cook the pork chops until the thickest part reaches 145°F (63°C). Remove from the griddle and let rest for 3–5 minutes.
10. Spoon the warm peach chutney over or alongside the pork chops. Finish with Blackstone Post Dust, if desired, and serve immediately.

Taylor Mock is turning date night at home into something special with these Enchiladas, filled with seasoned beef, melty cheese, and Mission Foods flour tortillas. 🌮 Each skillet is topped with enchilada sauce and plenty of cheese before getting hot and bubbly on the Blackstone. Finish them with crema, pico de gallo, cilantro, and all your favorite toppings for a dinner worth staying in for.

Ingredients
1 lb ground beef
½ sweet Vidalia onion, diced
Taco seasoning, to taste
Water, as needed
1 small can diced green chiles
1 can enchilada sauce, divided
6 Mission flour tortillas
1 cup shredded Monterey Jack cheese
1 cup shredded mild or medium cheddar cheese
Sliced black olives, to taste
Mexican crema or sour cream, for topping
Green onions, sliced
Shredded lettuce
Pico de gallo
Fresh cilantro, chopped
Salsa, optional

Directions
1. Preheat your Blackstone griddle to high heat. Place two small cast iron skillets on the griddle to preheat.

2. Add the ground beef and diced onion to a lightly oiled section of the griddle. Cook for about 5 minutes, breaking up the beef as it cooks.

3. Season the beef with taco seasoning, then add a small amount of water, the diced green chiles, and a little enchilada sauce. Mix well and continue cooking until the beef is fully cooked and the flavors are combined. Remove from the griddle and transfer to a bowl.

4. Toast the Mission flour tortillas on the griddle for a couple of minutes per side, just until warmed and lightly crisp. This will help prevent them from becoming soggy.

5. Carefully remove the hot cast iron skillets from the griddle and add a thin layer of enchilada sauce to the bottom of each.

6. Fill each tortilla with a spoonful of the beef mixture and shredded Monterey Jack and cheddar cheese. Roll tightly and place seam-side down in the skillets, adding three enchiladas to each.

7. Spoon a small amount of enchilada sauce over the enchiladas, being careful not to oversaturate them. Top with additional shredded cheese and sliced black olives.

8. Return the skillets to the hot griddle. Add a small amount of water around the skillets to create steam, then close the hood or cover with a basting dome. Cook for about 2 minutes, or until the cheese is melted.

9. Carefully remove the skillets from the griddle. Finish with Mexican crema, green onions, shredded lettuce, pico de gallo, and fresh cilantro. Serve immediately with salsa, if desired.
