Looking at Wilder today, you might never guess that cows once wandered up to the doors.

Our first kitchen occupied the space where the front desk stands now. Steven would return from the field with hunters, Marlee would host, and Ben would cook. Much of what Windy Hill would become was still ahead of us, but we already knew how much we loved welcoming people in.

Today, we’re pleased to share our renewed dining room. It gives us a moment to appreciate how far we have come, and the people who have helped us get here. As we grow, we carry forward the farm’s history, the Appalachian food traditions that inspire Ben’s kitchen, and the personal welcome Marlee offered our very first guests.

To those who remember our beginnings, we look forward to having you back at the table. And to those discovering us for the first time, welcome. We hope this will be the first of many meals we share.

One of our favorite parts of what we do is working with the farmers, growers, and makers who help shape the food we serve at Wilder.

This month, we’re especially excited to introduce you to one of those relationships. For our September W**e Gathering, our friends at Race Family Farmstead will join us as a featured guests of Harvest Table.

On September 16, we’ll gather in our newly renovated dining room at Wilder to hear more about their farm, their work, and the care behind the ingredients they raise. Chef Ben Warwick will prepare a four-course harvest menu featuring Race Family Farmstead alongside ingredients from our garden and other farms we’re fortunate to work with.

The evening will be paired with a curated tasting of Old World and minimal-intervention wines, continuing the conversation around season, place, and the people behind what we eat and drink.

We are so grateful for all of the farmers and producers who have a hand in our table, and we’re looking forward to sharing more of their stories with you 🌾

A simple question became the beginning of Watershed.

While sitting on the beach with his daughter, Chef Ben Warwick wondered where the white sand beneath them came from. His curiosity led him back to the Appalachian Mountains and to a larger story of the water that connects our mountains, rivers, farms, and the Gulf.

That journey inspired Watershed, the first chapter of Appalachian Nature, our evolving tasting series rooted in the landscapes, foodways, and stories of this region.

Twelve seats. Ten courses. One story told through food.

The best fall days at Windy Hill begin in the field and end around the table.

This October, we welcome Kristin Webber, founder of Chicken Librarian, for Covey Collective, a weekend shaped by the sporting traditions and hospitality of East Tennessee.

With only six spots available, the weekend will move at an easy pace. Mornings begin outside, learning in the field and following the dogs on a quail hunt. There will be time in the garden, time spent cooking alongside our team, and evenings gathered at Wilder over a menu inspired by the season.

For those who have grown up with these traditions and those experiencing them for the first time, there is a place for you here.
