Ingredients:
- Rotisserie or pre-cooked chicken
- 1 avocado
- Cherry tomatoes
- Spinach or mixed greens
- Microwaveable brown rice or quinoa
- Olive oil
- Lemon juice
- Salt & pepper
Instructions**:**
1. Heat your rice or quinoa in the microwave (about 90 seconds).
2. Slice the avocado and cherry tomatoes.
3. Add greens to a bowl, then top with warm rice and chicken.
4. Add avocado and tomatoes on top.
