🥩 Italian Beef (Chuck Roast)
🛒 Ingredients
3–4 lb chuck roast
1 packet Italian dressing mix
1 packet au jus gravy mix
1 packet ranch seasoning mix
4–5 cloves garlic (minced)
1 cup beef broth
1 jar (16 oz) pepperoncini peppers (with juice)
Optional: sliced onion, bell peppers
🔥 Instructions (Slow Cooker – easiest method)
Season & load
Place chuck roast in slow cooker
Sprinkle Italian dressing mix, au jus mix, and ranch mix over the top
Add garlic
Add liquids
Pour in beef broth
Add entire jar of pepperoncini peppers (including juice)
Cook
LOW for 8–10 hours
(or HIGH for 5–6 hours)
Shred
Remove roast, shred with forks, then return to juices
Let it soak another 20–30 minutes for max flavor
🔥 Oven Method (if no slow cooker)
Preheat oven to 300°F
Put everything in a covered Dutch oven or roasting pan
Cook 3.5–4.5 hours, until fork-tender
Shred and return to juices
🥪 How to Serve (Chicago-style)
Pile beef onto hoagie rolls
Spoon extra juice over top (or dip the whole sandwich)
Add:
Pepperoncini peppers
Giardiniera (spicy pickled veggies)
Melted provolone (optional)
💡 Pro Tips
Chuck roast is perfect because it gets super tender when slow-cooked
The pepperoncini juice is key—it gives that tangy Italian beef flavor
For richer flavor, sear the roast before cooking (optional but worth it)

🔥 Oven-Baked Wagyu Brisket Flat (No Smoker)
🥩 What you’ll need:
Wagyu brisket flat
Salt & coarse black pepper (keep it simple—let the Wagyu shine)
Optional: garlic powder, onion powder, paprika
Beef broth or stock
Foil or a roasting pan with lid
🧂 Step 1: Season
Pat brisket dry
Season generously with salt & pepper (Texas-style)
Let it sit at room temp for ~30–45 minutes
🔥 Step 2: Low & Slow in Oven
Preheat oven to 250°F
Place brisket fat-side up in a roasting pan
Add about 1–2 cups beef broth to keep moisture in
Cover tightly with foil (important!)

👉 Cook time: about 1–1.25 hours per pound

🌡️ Step 3: Cook to Temp (not time)
You’re aiming for internal temp 195–205°F
Around 165°F, you can:
Keep it covered (easy route), OR
Wrap tightly in foil (“Texas crutch”) if it isn’t already
🔥 Step 4: Optional Crust Finish

If you want a better bark:

Uncover the brisket for the last 30–45 minutes
Or throw it on a hot grill for a quick sear
😴 Step 5: REST (don’t skip this)
Remove and wrap in foil
Let it rest in a cooler or on the counter for at least 1 hour
🔪 Step 6: Slice Right
Slice against the grain
Thin slices = more tender bites
💡 Pro Tips for Wagyu
Wagyu has more fat, so don’t over-season
It cooks a bit faster than standard brisket—start checking early
Don’t rush it—tenderness comes from time + temp
