BEAN FEST is here!
The weather forecast may be the best it has been in many years.
Lodging is going to be impossible to find in Mountain View, so you may need to travel to a town close by.
If you cannot find a place to stay, make a day trip on Saturday, and come enjoy beans and cornbread, shopping, outhouse races, and LOTS of music.

One of the most requested recipes I have, is Grit Casserole. I tell our friends at breakfast, “if you don’t like grits, you will love this”.
-cook 1 lb hot sausage
-cook grits (1c grit/3c water/ 2 Tbls butter)
-mix together with:
-3 eggs
-1 1/2 c milk
-2 cup shredded cheese
-3 tsp seasoning
Put in casserole dish, bake at 375 for 1 hour.

Another easy recipe that I put out on pancake day.
I call it “Sausage - Cream Cheese - Croissant Squares” (yes, a unique name)
-1 tube of hot sausage
-1 cream cheese (softened)
-2 tubes crouisant
Brown sausage and combine with cream cheese. Spread over bottom layer of croissant, then top with 2nd croissant. Bake at 375 for 25 minutes (in gas oven).
Enjoy.

I get asked about our fluffy “Cathead Biscuits” very often. I use a recipe our dear friend Becky Gray shared with me.
I tweaked it a little.
For a 10” cast iron skillet:
- 4cups self rising flour.
- 1 stick of frozen butter grated.
- mix well.
- add buttermilk a little at a time.
- consistency is spoon barely standing.
Drop dough with a spoon, and make sure they touch.
Bake at 400 for 45 minutes.
Enjoy the fluffy goodness.
(No cats were harmed in the making)

Last month for Friday & Saturday night court square music.
