Local flavor for Chef Ross is all about the source. He uses the freshest area seafood, only Gulf of Maine fish, and Damariscotta region oysters. Produce grown locally at Spear Spring Farm, MOFGA Certified Organic. His flavor profile, however melds the local product with his background in California fresh and Caribbean influences.
