Friday easy recipe! I grew up on what people used to call “peasant food” . These dishes are now served in fine dining Italian restaurants. Simple ingredients and seasonings to let the natural flavors of the food take over. My mom is an expert at this. Growing up In Italy with little access to fancy seasonings , meat and complicated ingredients they made due with what they had… here is one of my favorites ! Pasta, brocolli, potatoes! Chop potatoes add to salted boiling water , add brocolli florets about five minutes later, add your favorite pasta, salt the water and cook until pasta to your liking . Drain some water but keep a soup consistency. Add salt, black pepper and olive oil to your liking … tada ! This is one of my daughters favorites 💚! .

My home is about food too… nothing like fresh tomatoes from dad’s garden … homemade bruschetta …slice loaf of French or Italian bread and bake on 500 degrees until light brown and crispy. Combine chopped up tomatoes, onion , garlic and fresh basil … combine dith olive oil and sea salt. Rub garlic cloves on the toast .. spoon bruschetta on top and serve !!!! Yum 😋.
