๐๐ฐ Lemon Raspberry Swirl Cheesecake ๐ฐ๐
๐ Ingredients
๐ช 1 ยฝ cups graham cracker crumbs
๐ง ยผ cup melted butter
๐ 3 (8 oz) packages cream cheese, softened
๐ฌ 1 cup sugar
๐ฅ 3 large eggs
๐ ยผ cup fresh lemon juice
๐ 1 tbsp lemon zest
๐ถ 1 tsp vanilla extract
๐ ยฝ cup raspberry preserves or purรฉe
๐ฉโ๐ณ Instructions
๐ฅฃ Preheat oven to 325ยฐF (163ยฐC). Line a springform pan with parchment and grease edges.
๐ช Mix graham cracker crumbs with melted butter. Press into pan bottom and bake for 10 mins. Cool slightly.
๐ง In a large bowl, beat cream cheese until smooth.
๐ฌ Add sugar and mix until fluffy.
๐ฅ Add eggs one at a time, mixing just until combined.
๐ Stir in lemon juice, lemon zest, and vanilla.
๐ฐ Pour cheesecake batter over cooled crust.
๐ Drop raspberry purรฉe by spoonfuls on top. Swirl gently with a toothpick or knife.
๐ฅ Bake for 50โ60 mins, until center is set but slightly jiggly.
