Sap season is over! It was short one this year (at least it was for me, I got a late start) but the conditions were perfect for a few days and I harvested about 20 gallons of sap. When the sap stops running it stops! It feels like Mother Nature flips a switch and it’s over. French toast is definitely on tomorrow’s breakfast menu.

Drip, drip, drip, bubble, bubble, bubble. Making maple syrup has some zen-like qualities. I’m thrilled with how much sap Mother Nature is sending our way, and I’m dreaming of pancakes.
