Try this Tuscan Chicken recipe for a quick, easy family dinner with lots of flavor from Melissa Perry, a registered dietitian at Orlando Health UF Health Cancer Center.⁣
⁣
INGREDIENTS⁣
• 3-4 boneless, skinless chicken breasts (about 3-4)⁣
• Salt and pepper to taste⁣
• 3 cloves of garlic, minced⁣
• 1 cup mozzarella cheese grated⁣
• 2 cups fresh spinach⁣
• 14 oz can of artichoke hearts, drained and chopped⁣
• 8 oz jar of sun-dried tomatoes, drained⁣
• 1 tbsp olive oil⁣
⁣
INSTRUCTIONS⁣
1. Preheat oven to 375 degrees.⁣
2. Lay the chicken in the bottom of a large baking dish. Season the chicken with salt and pepper and spread the minced garlic evenly on top of the chicken.⁣
3. Then place the spinach, artichoke hearts and sundried tomatoes on top of the chicken. Cover with mozzarella and drizzle the olive oil on top.⁣
4. Bake the chicken for 20 minutes uncovered. Then cover with foil and bake for an additional 25 minutes or until chicken is cooked through to 165 degrees F.⁣

Dear Friends,

After 18 years, we closed on September 1. Thanks to my hundreds of guests who have left me with good friendships and great experiences.

Our website is off the internet and our phone line is disconnected, but I'm not ready to part with my FB page (even though I haven't posted much in 2014).

FYI - Our house is for sale as we plan to retire in Florida near our grandchildren and my husband takes ME out to breakfast every weekend now!
