🍽️ Featured Entrée: Applewood Hot-Smoked Salmon
Fresh Atlantic salmon, hot-smoked over applewood and finished with a light maple glaze, served with smoked cheddar whipped potatoes, roasted asparagus, and an apple cider gastrique.

🍽️ Featured Appetizer: Applewood-Smoked Sea Scallops
Applewood-smoked, pan-seared sea scallops atop a crispy smoked cheddar corn cake with roasted sweet corn, finished with apple cider gastrique and chives.

🥗 Featured Salad: Strawberry & Avocado Salad
Baby field greens with fresh strawberries, ripe avocado, dried cranberries, candied pecans, and feta cheese, finished with a sherry vinaigrette.

And pictured here is one of today’s house-made desserts, our Mango Cream Charlotte—layers of fresh mango, cream, and ladyfingers combined into a light and refreshing summer treat.

At the Cashtown Inn, we’re constantly looking for ways to bring more homemade, scratch-crafted food to your table. From sauces and dressings to desserts and daily features, our goal is to make as much as possible in-house while sourcing local ingredients whenever we can.

One dessert that’s got a lot attention so far this week is our house-made crêpes. Each delicate crêpe is made from scratch and filled with a bright lemon cream, topped with fresh blueberries and strawberries, and finished with a raspberry sauce. It’s a light, fresh summer dessert that perfectly complements an evening out.

In addition to our regular dinner menu, we’ll also be featuring a selection of chef’s specials tonight and tomorrow. Take a look through the photos below to see what’s being offered this weekend.

What guests see at the Cashtown Inn is only part of the story.

Behind the scenes, there’s always another project waiting to be tackled.

This particular one turned into a two-day adventure. On day one, Aiden and Corbyn helped with the cleanup and prep work to get everything started. On day two, Jeremy and Izzy picked up where they left off and worked on the next phase.

As I watched them, I joked with Izzy that she’s becoming quite the “Jill of All Trades.” Between learning from her dad and her brother, she’s gaining an education that can’t be taught in a classroom. She’s learning how to solve problems, build things, fix things, and figure things out. Someday she may know more about repairs than her future husband!

Believe it or not, this project is actually tied to our liquor license process. We keep thinking we’re getting close, only to discover one more thing that needs done. The journey to get this license has been far more complicated than we ever imagined, and some of the requirements have left us shaking our heads. This latest project may seem a little absurd, but we’re hopeful it gets us one step closer.

Running and improving a historic property isn’t always glamorous. It’s often long days, unexpected projects, and tackling one thing at a time. But seeing our family and team come together to make it happen reminds us why we keep pushing forward.

To everyone who stays with us, dines with us, hosts events with us, leaves reviews, shares our posts, and cheers us on—thank you. Your support helps us continue preserving and improving this special place.
