As a chef-trained kitchen designer I treat ventilation as the hidden performance system of a commercial kitchen - it drives comfort, safety, compliance, and the real efficiency of your layout. Here are the coordination points I push early on so ventilation is a design solution, not a construction problem: 🔧🌬️🧑🍳
• Lock the appliance lineup first - hood type, hood location, and suppression scope all flow from what’s actually on the line.
• Coordinate hood type and location with the mechanical engineer and the AHJ - listings, process, and code interpretations matter.
• Give the MEP team per-equipment gas, electric, water and drain info early so replacement-air, duct routing and pressure relationships can be designed correctly.
• In renovations, document existing duct exits and hood coverage before finalizing the layout - move the hood on paper, not on the back of a truck.
• Notify suppression and hood manufacturers if equipment changes - suppression design depends on a stable equipment schedule.
