What to when a friend brings you a gallon of maple syrup. Once you open it it’s got to be refrigerated but a gallon takes up a lot of real estate in the fridge. So I simply canned it making it shelf stable and can store it in the pantry. Also made a small container of maple cream..

We hosted a birthday dinner for a friend and made a classic Bolognese Lasagna. It was a labor of love inspired by a recipe from . Her recipes are always authentic and very detailed, providing historical and cultural insights that bring the dishes to life. My wife thinks it was the best lasagna she ever had - seven layers of fresh homemade spinach pasta with a perfect Bolognese sauce.

A couple of days ago I stepped out of my culinary comfort zone and ventured into Indian cuisine. I pored through hundreds of recipes before finally settling on Pork Vindaloo, Red lentil dal, Gobi Manchurian and Garlic Naan. It was a good exercise in gathering your mis en place. So many spices. I think the star of the show turned out to be the Gobi Manchurian, a deep fried cauliflower tossed in a tangy savory sauce.

I had a couple of new culinary discoveries today. The first was the difference between wet and dry scallops. These were wet. You want dry. They were decent enough but what really saved them was the discovery of this butter sauce called Beurre Monte. A simple emulsion of butter and water to which I added some lemon zest. A really simple magical sauce.

Our grandson Luca is part of SYSO (Seattle Youth Symphony Orchestra) and yesterday, my heart swelled with pride and joy for two blissful hours. It was a much-needed respite from the sadness and shame I feel for our country today. These young musicians are absolutely phenomenal.
