Last nights Tapas cooking class was just like an express trip to Spain.
Sangria as a welcome refreshment got everyone in the mood. The students prepared Pan con Tomate, Croquetas de Pollo, Gambas al Ajillo, Tortilla Española and Patatas Bravas. The fantastic simplicity of Spanish food was enjoyed by all at our a group dinner with much laughter and more Spanish wine!

If you have been to an event at Lilley Mansion, you probably know already that our dinners are a labour of love.
Starting with the initial idea of a themed dinner to turning that inspiration into a story consisting of a 5 course menu and pairing it with appropriate wines, to selecting the most perfect ingredients and sourcing the best quality produce and meats (and being prepared to replace a dish if that quality can not be found), to the unglamorous tasks of peeling, chopping, washing, blanching, scraping, scrubbing, boning, tying, marinating until the indispensable mis en place is achieved and finally the cooking and plating of all courses.
Always with the intention to at the same time making it look seemingly effortless, whipping out a dish that took several days to make. When the plate goes out and is being served to the guest, the hope is that all this effort will be enjoyed and appreciated.

Monday’s Bordeaux Wine Dinner was such an example of Jeremy’s and my strive for our love for food and cooking, for attention to detail and authenticity. The praise and enthusiasm we got in return from you was and is our biggest reward. Thank you from all my heart to all our guests for embracing and supporting our philosophy!
