New experiment! Cured meat!
This is arm roast, salt cured for 4 days, then a soaked in red wine for 4 days. Air dried until 30-40% weight loss. The outside is chewy but the inside is soft and yummy. It is salty with a hint of red wine flavor! Fun!

This past winter I learned to make goat cheeses. I got chèvre down. Mozzarella eludes me. I also made cheddar, which has to age and can be susceptible to bad bacteria. I was nervous to open mine. It is GREAT and, importantly, melty!! Whoo hoo!!

It has been a busy few weeks on the Ranch!
•5 new kids (baby goats)
•New tiny house
•Helping family move back to Alaska
•Communication workshop
•Hosted The Family Reunion
•Frantic fence building
•Added cattle to the critter list! (Milk cow and baby, bull, and steer

Upcoming:
•Helping with the butcher of a steer.
•Lots of milking of goats and cow which means making yogurt, cheese, caramel, and other good stuff.
•Harvesting and processing plant medicines like St John’s wort, plantain, mullien, and prickly lettuce.
•Preparing for the fall arrival of a mini heifer, three mini donkeys, and more goats.
