Tonight's best soup award goes to Deneen and Bill! Congratulations!

Chicken Gnocchi Soup
Prep time: 10 minutes Cook time: 20 minutes Servings: 4
3-4 boneless skinless chicken breasts cooked and diced
1 stalk of celery cooked and diced
1/2 white onion diced
1/2 cup shredded carrots
1 tablespoon olive oil
4 cups chicken broth
salt and pepper to taste
1 teaspoon thyme
16-ounce package gnocchi
2 cups 1/2 and 1/2
1 cup fresh spinach roughly chopped

Heat olive oil in a large pot over medium heat. Add celery, onions, and carrots and sauté for 2-3 minutes until onions are translucent

Add chicken, chicken broth, salt, pepper and thyme, bring to a boil the gently stir in gnocchi. Boil for 3 to 4 minutes and reduce heat to a simmer and cook for 10 minutes.

Stir in 1/2 and 1/2 and spinach and cook for another 1-2 minutes until spinach is tender and taste for salt and pepper and serve.

Today we celebrate the moms, grandmoms, bonus moms, dog moms, and all the women who make life warmer, kinder, and filled with love. Thank you for the memories you create, the traditions you keep alive, and the countless adventures you make special for your families.

We hope your day is filled with relaxation, laughter around the campfire, peaceful moments in nature, and time spent with the people who matter most.

We will be staining boards on Saturday at ten am. Doing the signs on Saturday night at 7 pm.

What a year. I wanted to say thank you to everyone who stayed with us this year. Whether in a tent, RV or cottage, we had some of the best camping families of the 18 years we have owned Hemlock. We are especially grateful to our seasonals. We have the kindest and most friendly seasonal families i’ve ever experienced. If you missed us this year come see in 2026. We will be waiting!
