McMenamins Distilleries

McMenamins distilleries can be found at Edgefield and Cornelius Pass Roadhouse. The happy experiment worked, and soon whiskey was in the still.

Established in 1988, the Edgefield Distillery is housed in what was once a potato shed on the acreage of a former poor farm. We had been making wine at Edgefield since 1990, so it was a natural step to begin distilling brandy and grappa in 1998. Hogshead was the first, and we never looked back, adding gin, rum and other spirits to a growing lineup crafted by Head Distiller James Whelan and his tea

m. Spirits can be tasted at the adjacent Distillery Bar, which doubles as the “clubhouse” for Edgefield’s Pub Course. Our second distillery is at Cornelius Pass Distillery in Hillsboro. Its crowning glory is a century-old, 160-gallon Alambic Charentais pot still. Originally found in an old barn in Cognac, France, this copper beauty now sits atop bricks recycled from Edgefield, Kennedy School and the Crystal Hotel. The first spirit released from its elegant curves was White Owl Whiskey, and the creativity and craft continues today.

Happy 24th birthday to our Hogshead Whiskey!

Hogshead Whiskey is distilled with a passing nod to the great Scotch, Irish and Bourbon distillers, before striking off on its own. Boasting a palate-pleasing combination of malty spirit - reminiscent of the malted barley grain that began the process - and the smoky, vanilla sweet-wood that surrounds the spirit until bottling, Hogshead is a rich, amber-hued whiskey.

Handcrafted in small batches at Cornelius Pass Roadhouse Distillery, Billy’s been aging patiently for four years in American oak before making its way into the bottle. Smooth, full-bodied, and the kind of whiskey you want to take your time with.

An easy way to elevate your summer cocktail game? Try our High Council Brandy!

We’ve highlighted traditional distillation methods and unique northwest grape varieties to create a brandy that reflects our company’s innovation while respecting history and tradition. Thoughtful blending of our base grape varieties of Semillon, Chardonnay and Viognier and four years of aging in French oak has allowed the Brandy to reach lifted heights, worthy of the High Council approval.

Here at our distilleries, we're always experimenting and trying new things. We created Barrel Thief as a way to showcase some of our specialty, small batch, or experimental concoctions. This specific Barrel Thief is a 14 year old whiskey distilled from oats and malted barley and aged in a former maple syrup barrel. Only 90 bottles were produced, so this is a Whiskey Club exclusive. We're excited to announce a new Whiskey Club offering available now at Whiskey Shed locations! Introducing our first Barrel Thief release. Our Barrel Thief is limited quantity, single-barrel, experiemental products that have been made over the years from our distilleries. Our first release, pictured here, is a 14-year-old Oat Whiskey aged in an oak barrel formerly used to age maple syrup, lending aromas of light cereal and oatmeal cookies atop caramelized sugar, honey, and maple. Flavors of delicate grain flavors on the mid pallet followed by crème brulé sweetness, tangy toffee, and mellow spice with a lingering maple syrup finish.
