If you happen to be near Lenoir City stop by "Country Kinfolks" and see all the primitive and country items that they have for sale. Nice shop! Worth visiting if you are into country.

Today I made apple butter and it started me thinking. When I was growing up we grew and preserved most of our food. In the fall when we made apple butter we would start with bushels of apples and pounds of sugar and a large cast iron pot over a fire. As the day went on and the sugar and apples cooked, the mixture would reduce down from gallons to a few quarts of rich, dark, sweet, apple butter. I'm thinking that life is a lot like that. We start out with a thin mixture of all that we do in our lives but through time and fire, life boils down into a sweet concentrated love that feeds our spirit. All of the excess evaporates and we are left with a rich love for all those that we hold dear. Today I am thankful for a life boiled down to the basics. Oh how sweet it is. Kat

Helo friends,
The summer has been very busy at Pinecone Cottage. The garden has given up loads of fresh veggies for canning and freezing. Lots of work but so worth it on a cold winter day with a pot of soup simmering on the stove made from fresh canned green beans, tomatoes, squash and potato's and onions. Yum!
Friends and family have visited from all around the country and there was a lot of catching up to do which meant long hours sitting on the front porch talking, which is one of my favorite things to do.
Our cottage cat, Hessie, is expecting kittens any day now so we are anxiously awaiting their arrival. Baxter bunny and all the girls in the hen house are very lazy in the summer heat but faring well. Hope you all are having a wonderful summer. Dont forget to take time to dream. A tall glass of fresh lemonade with mint from the herb garden and a cool cucumber sandwich with dill will turn an ordinary summer day into a quiet celebration. ENJOY
