A few weeks ago, something happened that reminded me why I love this industry.

We have a regular guest at Ciel who comes to the rooftop specifically for our Trout Amandine. During one visit, he enjoyed it so much that he asked one of our servers if I could personally prepare it for him.

Not once. Not twice. Three times.

Before leaving, he sent me a tip through the server and thanked me for the dish. I ended up using that money to buy pizzas for the team, but what stayed with me wasn’t the tip , it was the gesture.

As chefs, we spend countless hours focusing on flavors, consistency, and ex*****on. Knowing that someone enjoyed a dish enough to order it three times in a single visit is the kind of compliment that means more than words.

The funny thing is that Trout Amandine is built on simplicity, perfectly cooked trout, brown butter, toasted almonds, fresh lemon, and seasonal vegetables. Nothing complicated. Just honest food prepared with care.

Special thanks to “ASH” for the idea of adding this dish to the menu. I simply had the opportunity to bring it to life, and today it has become one of the most requested dishes on our rooftop.

Sometimes the simplest dishes leave the biggest impression.
