🌱 KNOW YOUR FARMER. TASTE THE DIFFERENCE. 🌱
So much of what comes out of our kitchen starts with really, really good ingredients and a whole lot of those ingredients come from our friends at Claybanks Farm and our favorite “Grumpy Farmer.” ❤️
This week, their freshly harvested sweet onions are getting the spotlight.
These bad boys are naturally sweet straight out of the dirt and then we turned them into a sweet and savory house-made candied onion jam AND slowly caramelized another batch until they were sweet, golden perfection.
And then we put BOTH on:
🐄 THE NOT SO GRUMPY FARMER DIP
Two fresh beef patties + melty Gruyère + Claybanks caramelized sweet onions + our Claybanks candied onion jam + spicy-ish horseradish mustard crème, stuffed into a toasted 8-inch baguette.
Served with a side of Chef Ollie’s rich French onion soup from for dipping, dunking and absolutely drenching that sucker.
But Claybanks doesn’t just show up for feature week.
Their gorgeous produce makes its way through our kitchen all season long and you’ll be tasting it in our soups LONG after summer is gone. We take those beautiful farm-fresh tomatoes, slow roast them, and turn them into the house-made tomato base that starts so many of your favorite Gnarly soups.
