Today, our subject is about egg coffee.
The first one was made by Mr. Hòa in 1946, the French colonial period. He was bartender of the most famous five-star hotel, Metropole Hotel and made thousands of cappuccino for upper strata. Inspired by that coffee, he created a new tiptop coffee that could popularize to folk so it must be cheap, then the idea about egg replaces dear effervescent milk and condensed milk came out.
The way to make it showed the maker’s enthusiasm. At first, he separated the yolk and glair then creamed one by one with honey and sugar. The coffee was put in the bottle of cup then cream part. The egg coffee was served with a small cup inside a boiled water bowl to keep it hot for a time. It was affected
because he had to whisk by hand ‘till it is completed done, just one small mistake made the cream
separated or fishy.
Nowadays, the machines make it in easier way but the perfect ratio of ingredients makes the name of Mr.Hòa. Ha Giang – What you should know about blossom season in early of February.
After Lunar New Year celebrated, at the end of January and early February, it’s the blooming time for peach blossoms and plum flowers in Ha Giang. Let’s have a general look at this breathtaking scenery.
There are large wild peach blossom tress planted abundantly at Pho Cao village (after passing Tham Ma slope) and Sung La village (where Pao’s House is located) and are located on both sides of the road. These can also be seen in places such as Van Chai (between Yen Minh and Tham Ma slope), and the road from Vuong’s Palace to D**g Van, Lo Lo Chai village in Lung Cu,... which is perfect for filming and taking photos. Also, Lao Xa village has a great deal of blossoms and old-style houses. The houses hidden behind the canals are very easy to see from the pristine 176 provincial road. You will discover a stunning view from the high and remote areas if you climb to the top of hills.
It would be time for white pear flowers and bright red rice flowers as soon as the peach blossom season ends. It seems that you couldn’t find any where has countless the rice flowers like it is in Ha Giang. Along Nho Que River and Ma Pi Leng Pass, you could enjoy the blossoming rice flowers while rowing following the river. Additionally, the rice flower lasts until the middle of March.
Apart from the blooming season, you’d better check the weather forecast in order to take a great photo shoot. The perfect weather for travelling here is sunny days or cloudy without raining. It’s often drizzly and foggy so travelers should prepare warm clothes, rain coat when riding motorbikes.
Suggesting travelers should pack neat clothes, light-color outfit and wear sport sneakers because of the long riding.
Bring cash (about 2 millions vnd). There are very few ATM at the town center and even less at small villages.
The gas stations are placed in towns and at the retail shops along the main roads. When the travelers stop to take photos, please park the bikes carefully and safely without making traffic congestion.
The road in Ha Giang is not as difficult as the past, but travelers should ride motorbike carefully because there are sharp and steep bends such as Bac Sum slope, from Can Ty to Yen Minh, along Nho Que river,... Some area are repairing so it’s quite badly to ride like from the Yen Minh travel information center to Yen Minh town, the center Lung Cu commune, etc.
DO NOT break the branches and cut the flowers (except for rice flowers, they usually fall covered the ground). Let’s protect the environment by small your actions.

🌸🌼🌸 New Year’s Eve Offerings 🌸🌼🌸
New Year’s Eve (Giao Thua) is a sacred tradition of saying good-bye to the previous year and welcoming New Year. At midnight, people offer both indoor and outdoor ceremonies.
Open-air ceremony is made to send thanks to gods. The offering simply includes a boiled chicken or a pig head, cooked rice, flowers (usually roses), fruit, beverage and Joss paper.
Right after that, the indoor ceremony takes place. People light up incenses on the altar and whisper to invite the spirit of ancestors to come back home, celebrating the Tet Holiday with the whole family and wishing for a great new year. After Tet Holiday, another ceremony will be offered for ancestors’ departure to Heaven.

Kitchen God Day - Tet Tao Quan
The meaning of Tet Tao Quan is all about preparing a grand farewell for three Deities on their journey to the Heavens, and the ceremony is held at every Vietnamese household. On the 23r day of December, normally, grandmothers and mothers of the family will cook a lot of delicacies such as new harvest steamed sticky rice or plain porridge. They clean and decorate the altar with fresh flowers and fruits. On the altar also laid three votive paper caps, the yellow one in the middle for Mrs. Tao and two black ones for two Mr. Tao.
Along with these preparations, a large bowl of water with one live large golden carp or three small ones is kept aside. The carps are all alive and will be freed into a pond, lake or river after the worshipping ceremonies are finished. Tao Quan can only travel up to the Heavens with the help of golden carps, as carp is used to be the Heavens’ animal and is a very good swimmer.
Freeing the carps is also to show human’s respect and gratitude towards animal worlds, and wishing for the good fortune of the upcoming year.
4. Vietnamese sausage (Gio Cha)
They call gio cha Vietnamese sausage because of the somewhat similar shapes. However, unlike normal sausages, gio cha is often cut down to pieces across the length of it for every people. Similar to banh chungand banh tet, gio cha is packed tightly within green leaves so it could last for months. But the difference is gio cha’s fillings are lean meat sauced with fish sauce and pepper. And gio cha is not a single food but two instead. Gio is filled with boiled meat whilst cha is made of deep-fried meat.
5. Five-fruit tray (Mam Ngu Qua)
The five-fruit tray is a must-have on the altar during Tet. The exact selection varies through time, region, and even the house owner’s preference. However, they must be of a different color as the five-fruit tray also plays an important role in decoration for Tet. In Northern Vietnam, popular choices are orange, banana, pomelo, green apple, pear and the “Buddha’s hand” fruit. Meanwhile, in Southern Vietnam, where some of those fruits are not available due to a hotter climate, people often choose watermelon, papaya, mango, pineapple, coconut or dragon fruit.
6. Candied fruits and seeds platter (Mut Hoa Qua)
This is the favorite one for children across Vietnam during Tet. The candied fruits platter is often bought in the set or chosen one by one, or even made in-house. Apart from being used to welcome guests, they are a common choice within Tet gift baskets. Like the five-fruit tray, candied fruits often vary a lot in terms of the component. The most popular ones are coconut, carrot, star fruit, lotus seed, ginger or kumquat.

Let's find out what kind of dishes would be servered during Tet holiday. In Vietnamese language, Tet is not literally celebrated, but “eaten” instead! In Vietnam, ăn Tết (eat Tet) is understood as to celebrate Tet. This shows how important food and cuisine is to Vietnamese New Year.
1. Vietnamese square sticky rice cake (banh chung) and Vietnamese tube sticky rice cake (banh tet)
While both of these banh are essentially rice, fatty pork and bean fillings packed neatly inside green banana leaves or d**g leaves, there’s some obvious difference between them. In general, banh chung is an iconic Tet food in Northern Vietnam. Meanwhile banh tet usually represents Southern Vietnam.
2. Boiled chicken (Ga Luoc)
This is another popular Tet food that is easy to make. Boiled chicken is basically a whole chicken boiled to the color of pale yellow. The chicken is not to be eaten until it had been placed on the altar to pay homage to their ancestors. This dish is appear not only on Tet occasion, but also on other special ones. Afterward, the chicken is cut to smaller parts like a turkey in the west. Because Vietnamese people often simply boil the chicken with only water, it is often eaten with a tiny dish of salt, thinly-sliced lime leaves, some lime juice and sometimes a bit of sliced chili as side seasoning.
3. Vegetables soup with pork skin (Canh B**g)
Every meal in Vietnam includes a shared bowl of soup and Tet meals are no exceptions. During Tet, people from across the country often go for a frugal and hot bowl of vegetables soup with pork skin. The vegetables selection often includes broccolis, cauliflowers, carrots, mushrooms and peas, added with young shrimps and some meatballs.
The broth is slightly sweetened with braised meat bones. Ingredients are plenty but the only one thing that can’t be left out is the pork skin. Though its flavor is very light, the pork skin gives joy to eaters by how its scabrous surface felt inside the mouth when being chewed.
Kumquat trees and peach blossoms, both with important symbolic meaning in Vietnamese culture, are put in homes and businesses, again with the hope of bringing good wishes for the year to come. You’ll see them all over the country either being displayed or being bought and sold from markets.
You’ll also see plenty of trays containing 5 fruits being taken to shrines and temples. The fruits vary regionally but all symbolise elements for a positive year. Many people wear red, similar to other Asian countries, as it’s believed the colour brings good luck. Additionally, children receive “lucky money” in red envelopes.
One of well-known dish during Tết is Banh chung in Northern and Banh tet in Southern, or Tet cake. A green leaf-wrapped square that you’re sure to see being bought and sold everywhere. It’s traditionally made together by the family and contains glutinous rice, mung beans and pork.
