Dawn Ludwig has devoted her career to helping people discover the fun, beauty, and delicious taste of natural foods. For 15 years, she owned and directed The Natural Epicurean Academy of Culinary Arts of Austin, Texas, recognized as a one of the top “Cutting Edge Cuisine” cooking schools in the U.S., according to Vegetarian Times (December 2000). In addition to training up-and-coming chefs, Dawn’s

passion is guiding families to incorporate better foods into their everyday lives. With a 22-year old daughter and a 12-year old son, she has first-hand experience as a busy mother and business owner putting delicious and nutritious food on the dinner table. Her 25+ years of experience working with culinary students, teachers, patients and health care practitioners has taught her what works, what doesn’t, and most importantly, how to work with families to make living healthier a practical reality. Dawn has now teamed up with her husband, Dr. David Ludwig on his NYT Bestselling book Always Hungry? Conquer Cravings, Retrain Your Fat Cells, and Lose Weight Permanently and their follow-up Cookbook Always Delicious. She helped translate his science and years of research into comprehensive recipes, menu plans, and tips for applying the principles to everyday life. Dawn has written on nutrition and health for a variety of publications including Whole Health Magazine, Natural Home, Austin Monthly, Austin Fit, and other health journals. Having experienced profound healing in her own life through the power of natural foods, Dawn has a deeply personal understanding of the maxim: “Let food be thy medicine, and let medicine be thy food.” With a gentle, yet powerful approach, she is able to touch and transform the lives of people of all ages, and in all states of health. Cooking for 1 this weekend, so I decided to make a “clean-out-the-fridge soup”. Sautéed fennel, carrots and cubes of tofu in a generous amount of olive oil. Added oregano, salt, pepper, and some red chili flakes (generous amounts of herbs since tofu absorbs so much flavor). Added a can of butter beans and a can of diced tomatoes. Garnished with scallions and a touch of ume vinegar (my favorite Japanese ingredient that gives soups a little zing and plenty of umami). Dinner done and delicious. How do you get creative to “clean out your fridge/pantry” for dinner?

QUICK, EASY, & as few dishes as possible!!! That was my goal when I landed home after a long trip and nothing in the fridge. I stopped by the grocery, bought salmon, pesto, sun-dried tomatoes and a can of butter beans. Covered the salmon in pesto, arranged it on top of the tomatoes, and surrounded it with butter beans. Broiled for 10 minutes (until the salmon skin was crispy) and I had a restaurant-quality delicious meal.

Daily calcium supplement! I love it when I can find fresh sardines! Just roll them in chickpea flour with a bit of salt and pan fry them in a generous amount of hot oil. You can eat them whole, and they’re delicious!!!!
