Sacred WHITE OLIVES at Liedjiesbos!

Everyone who knows us will know how we love our olive trees. Today marked a huge milestone for us as we planted 5 rare white-olive trees.

The white olive, is an extremely rare ancient olive cultivar and is nearly extinct.

About these special trees:

They produce fruits that turn a striking ivory-white or pearly color when ripe.

The white hue occurs because a genetic mutation blocks the synthesis of flavonoids and anthocyanins (the pigments that normally turn olives dark or black during ripening).

Sweeter and milder than typical green or black olives because they contain fewer bitter antioxidants and polyphenols.

Historically grown by medieval monks, the clear oil extracted from these olives was prized as sacred chrism oil for religious sacraments, royal anointings, and fueling church lamps.

The oil was favored in old traditions because it burned cleanly without producing dark smoke that could stain church walls.

The variety faced near-extinction, but it has seen small-scale rediscovery and propagation by specialized growers.

We can't wait to make our first oil from these special trees in a few years.
