My Father’s Day meal.
1) Pink Lady apples sautéed in butter and topped with dollop of sour cream, red and black seaweed caviar, radish batons, and drizzled with butter pan sauce;followed by:

Sliced pan seared beef with pommes pont-neuf (broad cut potato chips), sliced apple, arranged on cos lettuce and drizzled with a creamy, salty and tangy horse radish dressing. Missing are the roasted walnuts- mouse ate it🤣
On the steaks a drizzle of pan sauce, and garnished with thyme. Ideal for a light lunch or supper. On the side( not pictured) is a glass of KWV Rose. So yummy!

Bretagne on my plate. Cooking from the land of my ancestry. I made a typical French dish -Lotte à l’Amoricaine. lotte is monkfish, so i used kingklip instead, and l’amoricaine is the coastal town of Armor. I flambé Kingklip in butter and cognac, then poached in a broth of tomatoes, white wine, fish stock, piment d’espelette- you can substitute with cayenne pepper , and herbes de provence. Served with a timbale of rice cooked in chicken stock, beetroot spaghetti and dill fronds. So delicious. 🇫🇷. #djchefeugene #eugeneskitchen2020 #

Today continuing with stews and cooking from the pantry, I made a lovely Portuguese Galinha Estufada (chicken stew).True comfort food with Latin warmth, color and flavor, its name translates as “stewed chicken.” It’s a cousin of Spanish arroz con pollo with an exotic whiff of pilaf.
Prep Time: 15 Minutes
Cook Time: 1 Hour
Yield: Serves 2
Ingredients
• 6-8 chicken thighs or other parts /or skinless-boneless cut into cubes
• 1 medium onion
• 1 can (400g) whole peeled tomatoes/ or 4-5 fresh tomatoes peeled
• 2-3 red peppers sliced into julienne strips
• 1/2 cup fresh shelled or frozen peas
• 1 cup rice, rinsed
• 3 cups water
• 1/2 cup dry white wine
• 2 garlic cloves minced or crushed
• 2 Tbsp olive oil
• 1 bay leaf
• 1/2 Tbsp paprika
• 1 Tbsp chopped parsley
• salt
• black pepper
Preparation
1. Peel and chop the onions; peel and mince the garlic. Cook them in the olive oil in a heavy dutch oven or any medium size pot with a thick bottom, until translucent.
2. Chop the tomatoes and put them and their juice into the dutch oven with the bay leaf and paprika. Add in the red peppers. Cover tightly and simmer over low heat for 5 or 10 minutes. Stir occasionally and check that the tomato sauce does not burn
3. Pour in the wine, add the chicken pieces and the water, bring back to a boil, cover, and simmer for 20 minutes.
4. Stir in the uncooked rice and add salt and pepper to taste. Cover, simmer for 20 minutes or until the rice is just cooked.
5. Stir in the peas and the chopped parsley, cover, and simmer for 5 minutes more.
The rice should absorb all the liquid and the chicken should be falling off the bone.
Sprinkle over more parsley before serving

Chef’s Note: If you prefer crispy chicken, you can take the chicken pieces out before adding the rice or potatoes to the pot, then crisp the chicken in 180 C oven while the rice cooks in the tomato sauce on the stove top.
Bring the meat and the rest of the dish back together on a serving platter.
