Twice-Baked Cheese Soufflé with a Mini Vinaigrette-tossed Apple, Rocket and Walnut Salad.

Beef Wellington with Bordelaise, or Kingklip with Béarnaise, both served with Asparagus Spears Gathered in a Crispy Rice Paper Pocket with Melted Mozzarella, Butter-Braised Carrots, and Golden Potato Dice.
